205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] Observation (CORRECTED DURING INSPECTION): 4L milk jug probed at 6.4°C, creamer at 6.1°C. Corrective Action(s): All milk, cream, cheese, eggs, sandwiches, subs, cheese bread in the walk-in cooler must be discarded (all perishable foods). All perishable foods must be stored and maintained at < 4°C. Violation Score: 25

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: -Ambient temperature inside walk-in cooler at around 5 - 6°C. -Ambient temperature of the display area with dairy products of the walk-in cooler observed at 7.7°C. -All areas of the cooler must be able to maintain < 4°C. -Walk-in was also observed to be overstocked that prevented cold air from circulating. Corrective Action(s): -Do not overstock coolers. -Please service walk-in cooler to maintain < 4°C. To be corrected by 21-July-2021. Violation Score: 15

-Handwashing station fully equipped with hot and cold running water, liquid soap, and paper towels. -Quat sanitizer at 200ppm in spray bottle available for self-service, screamer area. -All freezers at < -18°C -All other coolers except walk-in cooler at < 4°C -No signs of pests observed. *Walk-in cooler flaps need to be cleaned. *Please ensure side storage area with two chest freezers are cleared of clutter (cardboard).
