Observation (CORRECTED DURING INSPECTION): Two large containers of butter sauce were being cooled down at the time of inspection. Time tracking for cooling is not in place. The chef was instructed to divide the butter chicken sauce into smaller portion, and use ice water to actively cool down the sauce.

Observation (CORRECTED DURING INSPECTION): A container of salad (contains sliced red onion, lettuce, carrots) was in the temperature danger zone (4C - 60C) for more than 2 hours. Internal temperature was measured at 10.5C. The manager discarded the salad due to time and temperature abuse.

Observation (CORRECTED DURING INSPECTION): Multiple in-use utensils were stored in a room temperature water that was visibly soiled. The manager prepared a bucket full of ice to store in-use utensils.

Observation (CORRECTED DURING INSPECTION): The dishwasher was not functioning at the time of inspection. Two compartment sink manual dishwashing method was reviewed. Chlorine (100ppm) sanitizer was made into the second compartment sink. Chlorine test strips are available.

Observation (CORRECTED DURING INSPECTION): The kitchen hand sink was obstructed with the dishwasher's pipes for chemical buckets. Manager removed the pipes at the time of inspection. .

Observation: Multiple foods in the dry storage area (e.g., flour, spices) and walk in cooler were not covered.
Corrective Action(s): Any opened bag of foods must be transferred to a food grade container with tight fitting lid. Provide an adequate cover for all the foods in the cooler (e.g., aluminum foil, plastic wrap, etc.)

Observation: The brand new dishwasher's installation was initiated today; however, the installation was delayed due to missing components. The technician is planned to be back this afternoon with the missing components.
Corrective Action(s): Complete the installation of the new dishwasher. Food contact surfaces are to be manually cleaned and sanitized until the new dishwasher's installation is completed. Dining area is to be closed and only offer a take out. Correct this by: March 10, 2021.

Comments

The premise installed a brand new dishwasher today; however, the installation was delayed due to missing components.The technician is expected to be back this afternoon with missing parts and complete the installation.
The premise is to close the dining area and offer take-out service only, and practice manual dishwashing method described by the Environmental Health Officer.
Follow up inspection is to be conducted tomorrow as soon as the premise is open. Should the dishwasher is not functioning adequately, the closure order will be issued.
