Observation: Walk-in cooler was 7.3 C. Cooked pasta in cooler at 7.3 C and pizza toppings at 7 C.
Corrective Action(s): Staff adjusted the cooler temperature at the time of inspection. Check temperature in 1 hour. All coolers must be 4 C or colder.
Adjust again or repair if necessary.

Observation (CORRECTED DURING INSPECTION): 1. Staff unable to describe proper dishwashing procedures.
2. Bleach sanitizer in spray bottle too strong and spray bottle not working properly.
Corrective Action(s): 1. Discussed with staff the proper method of manual dishwashing. Follow poster. Instructed staff to fill second compartment with bleach solution (3 caps of 5% bleach bottle with half the sink filled gives 100-200 ppm chlorine concentration).
2. Obtain a new spray bottle. In the interim, use bleach in a bucket/from the sink.
