Observation (CORRECTED DURING INSPECTION): No paper towels were available at the handsink near the bar. Wall-mounted paper towel dispenser in the bar was empty of paper towels.
Corrective Action(s): Staff re-stocked paper towels in the wall-mounted dispenser in the bar. Ensure all handsinks are supplied with liquid soap, hot and cold running water, and single-use paper towels.

Observation: Sliding lid of the ice cream freezer was observed to be partially taped near the handle. Manager informed this lid is partially broken, it was taped as an interim measure, and the lid would be replaced with a new one.
Corrective Action(s): Replace the lid of the ice cream freezer so that it is in good working order and is made of easy-to-clean, smooth, durable, and non-toxic materials; Correct within 2 months. Continue to monitor freezer temperatures (required: -18 degrees C or less).

Comments

Other handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed properly washing their hands.
Walk-in-cooler and other refrigeration units were at 4 degrees C or less.
Walk-in-freezer and ice cream freezer were at -18 degrees C or less.
Upright freezer was at -11 degrees C (required: -18 degrees C or less). Manager informed this freezer will be cleaned and defrosted tomorrow. Cleaning is conducted every Thursday of the upright freezer.
Dipper well was in use.
Overhead sprayer at the 2-compartment sink near the dishwasher was operational and supplied with hot water. Sink plugs were available.
Dishwasher final rinse chlorine sanitizer residual was at 100 ppm (minimal required: 50 ppm) at the plate/utensil level.
Sink and surface cleaner and disinfectant in the sanitizer pails and spray bottles was within the manufacturer's recommended concentration range.
Prep. sinks were operational. .
Frozen pre-packaged food was observed undergoing thawing under cold running water.
No signs of recent pest activity were evident in the kitchen at the time of the inspection.
Ice machine was in a clean condition, and scoop was stored separately.
Food storage areas appeared clean and organized.
Kitchen Manager on duty held valid FOODSAFE Level 1 equivalent course training (Safe Check Advanced Food Safety - Canadian Food Safety Group, expiration date: June 15, 2030).
