Observation (CORRECTED DURING INSPECTION): Third sink (sanitizer sink) had 100 ppm QUATS. Sanitizer spray bottle had 100 ppm QUATS.
Corrective Action(s): Staff drained the sink and started re-filling the sink with 200 ppm QUATS. The sanitizer spray bottle was re-filled to have 200 ppm QUATS. Ensure sanitizer concentration is checked and the solution is replaced timely.

Routine inspection conducted.

Temperatures:
- Sushi cooler: 4C
- Preparation coolers (2) were at 4C or below
- Retail coolers (3) were at 4C or below
- Chest freezer was at -21C
- Domestic cooler: 3C
- Domestic freezer: -20C
- Hot holding unit was holding food at an internal temperature of 60C or above
- Sushi rice had a pH of 4.0

All coolers had accurate thermometers.

Sanitation:
- Hand washing sink was adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Knives were in good sanitary condition.
- 3-compartment sink had plugs.
- General sanitation is satisfactory.

Storage:
- Dry ingredients are stored in pest proof containers.
- Items inside preparation coolers were covered with plastic wrap or tight fitting lids - GOOD.
- Food was stored off the floor.
- Storage practices are satisfactory.

Pest Control:
- Facility is monitored by a professional pest control company.
- No evidence of pest activity noted at the time of inspection.

Administration:
- Staff and supervisor have valid Food Safe level 1 certification. Certificates are posted on the wall with the permit.
- Permit is posted.
- Temperature logs are up to date.
- Pest control inspection reports are to be emailed to the inspector.
