Observation (CORRECTED DURING INSPECTION): Slicers were found to have dried food debris.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized to prevent potential cross contamination. Equipment may require presoaking prior to washing. Equipment was soaked at the time of inspection for proper washing and sanitizing.

Observation (CORRECTED DURING INSPECTION): Raw fish was stored above cooked pasta and vegetables and carrots were stored on the floor.
Corrective Action(s): Ensure all foods are stored off the floor and protected from potential contamination. Raw meats must be stored below ready-to-eat foods to prevent potential contamination of foods. Cooler was reorganized at the time of inspection.

Observation: Rodent droppings were found in the facility and partially live rodent was found on a sticky trap by the ice machine.
Corrective Action(s): Contract professional pest control services to prevent further pest infestation.

Observation: Rodent droppings were found in the facility (behind equipment and in the dry storage area).
Corrective Action(s): Clean all areas affected by rodent droppings and sanitize with a 1:10 bleach solution.

Observation: Walk-in cooler was at 4C to 6C and compressor kept turning on and off.

Comments

-Walk-in cooler (next to walk-in freezer) was at 4C.
-Walk-in freezer was at -16C.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer spray bottles were at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Deli slicer was properly disassembled for cleaning and sanitizing.
-Ice machine was clean and well maintained.
-FoodSafe Level 1 valid until December 9, 2021.
