205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A large pot of sambar dal (cooked lentil) was stored in cooler at an internal temperature of 23C. Upon asking, operator stated that the dal was cooked last night and was left at room temperature overnight for cooling. The pot was then moved to cooler in the morning.
Corrective Action(s): Ensure that the potentially hazardous food that have been cooked and intended to be kept in refrigeration are cooled properly i.e. cooling down from 60C to 20C within 2 hours and then from 20C to 4C within 4 hours to prevent any microbial growth and/or toxin production.
- Use small portions or shallow pans to expedite the cooling process.
** Operator discarded the large pot of sambar dal during inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwash station next to low temp mechanical dishwasher was not easily accessible. Staff put a cutting board on top of sink and used the board for cutting onions.
Paper towel dispenser was found empty.
Corrective Action(s): Ensure that handwash station is accessible to staff at all times and has adequate supply of hot and cold running water, liquid soap and paper towels.
**Staff moved the cutting board to the other side of kitchen and restocked the paper towel dispenser during inspection.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Coolers were measured at 4C or less.
- Freezers at -18C or less.
- No hot holding was conducted at the time of inspection.

Storage:
- All products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Sanitizer bucket available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher is used for dishwashing. The concentration of chlorine residual recorded at 100ppm.
- 2 compartment sink available and maintained in sanitary condition.
- Build up of grease observed on one side of vent. Next cleaning service is scheduled for March 2022.
- General sanitation of facility was satisfactory.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present in the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
