Observation (CORRECTED DURING INSPECTION): At the time of inspection, no sanitizer was available onsite. Staff stated that cleaner solution is refilled in the spray bottle. Staff brought 2 new spray bottles during inspection and refilled them with 200ppm QUATs solution.
Corrective Action(s): To ensure adequate cleaning and sanitation of the food contact surfaces, please use an approved food grade sanitizer and have it available during facility operation.

Observation: Build up of flour observed on the floor mainly in the corner and under the prep table where dough is prepared/processed.
Corrective Action(s): Please clean the abovementioned area and ensure that the facility is maintained in good sanitary condition.

Observation: One staff on duty at the time of inspection and he did not have FOODSAFE Level 1 or equivalent. Operator has FOODSAFE Level1 but was offsite for delivery.
Corrective Action(s): Please ensure that in operator's absence, at least one staff on duty has FOODSAFE Level 1.

Comments

First routine inspection after initial.

Findings:
- Temperature of walk in cooler & stand up cooler recorded below 4C.
- Prep cooler - top compartment probed and pineapple slices recorded at 3.6C and bottom compartment at 4.9C.
- Handwash sink in the front and back area had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink used for manual dishwashing.
- 200ppm QUATS recorded in 3rd sink and dispensing unit.
- Food was stored at least 6 inches off the floor.
- No signs of pest activity observed.

Note:
- Edges of pizza cutters are wearing out. Please consider replacing them with the new ones in a month or as needed.
- Staff stated that the prep cooler ambient temperature fluctuates and a new prep cooler has been ordered. Please ensure that the prep cooler is able to maintain a temperature of 4C/40F if cold potentially hazardous food is stored in it.
- It is recommended to have at least one staff who is intended to stay onsite during their shift to have FOODSAFE Level 1 or equivalent.
