Observation (CORRECTED DURING INSPECTION): Trays of precooked taters stored at room temperature. Chicken and other deep fried potentially hazardous foods around 7 C in upright cooler.
Corrective Action(s): Taters were re-located to walk-in cooler. Potentially hazardous foods in upright cooler were transferred to walk-in cooler.
Do not keep potentially hazardous foods above 4 C for more than 2 hours.

Observation: Mice droppings observed throughout the premise - behind and underneath equipment and on unused equipment.
Corrective Action(s): Remove all mice droppings. Clean and sanitize these areas. All new pest droppings must be cleaned immediately.
Close/fill in all gaps to prevent entry of pests.
Go through unused equipment to check for nesting sites.
Check the integrity of all incoming products.
Correct immediately.

Observation: Upright cooler had an ambient air temperature of 12 C.
Corrective Action(s): All potentially hazardous foods (except 2 trays of food that will be used within the next 2 hours) that were made less than 2 hours ago were transferred to walk-in cooler. Cool foods in walk-in cooler prior to filling this cooler. Do not overfill. Place an accurate thermometer in cooler. Only use cooler for storage of cold foods once an ambient air temperature of 4 C can be maintained.
Correct immediately.
