Note:
Facility has started offering food in buffet style, in addition to a la carte. Hot foods are stored in hot holding units, while foods that require cold holding (ie. cut fruits, cheese, etc) are changed every 30 minutes. Foods that are left over after 30 minutes will be discarded. Chef has indicated facility is trying out buffet style. Should this be a permanent option for customers, facility should look into purchasing equipment that can hold food hot and cold properly, along with consideration of sneeze guards etc.
