Observation:
Lots of drain/fruit flies found in the kitchen areas. They are on walls, and around sinks and drains.
Corrective Action(s):
1) Contact a pest company to treat all floor drains and sink drains with a special foam that will remove accumulated food and grease from the interior surfaces of drains, and kill flies.
2) Detailed cleaning with a scrub brush and hot soapy solution of the undersides and legs of sinks, prep tables and racks to remove any food debris and pooling water. This shall be done on a weekly basis.

Observation:
The interior surfaces of the ice machine has mould and mildew growing on it. This can fall and contaminate the ice, which could cause people to become ill.
Corrective Action(s):
Wash and sanitize the interior surfaces of the ice machine with hot soapy water, and then sanitize. Ensure to empty the all the ice out before cleaning and sanitizing.

Observation:
The glasswasher had [Cl2] of 0ppm. The dispensing motor for the chlorine/sanitizer was not roatating and dispensing the chemical.
Corrective Action(s):
1) Immediately stop using the glasswasher and use the dishwasher in the kitchen to wash and sanitize glasses.
2) Call a repair company to fix the glasswasher so the [Cl2], during the rinse cycle is between 50-100ppm. Have all the dispensing motors (soap and rinse aid) serviced to ensure they are working correctly.

A routine inspection was completed:
A routine inspection was completed:
- Coolers 4C or colder; freezers -17C; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temp of 71.9C at the plate's surface as per max/min thermometer.
- Quats sanitizer in spray bottle had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good and improvement seen in hard to reach areas.
- Exhaust canopy was professionally cleaned and serviced in March 2024. Next service and cleaning due in September 2024.
- Staff present that possesses a valid FoodSafe Level certificate, or an recognized equivalent certificate.
- No more signs of mice activity. Manager states the pest company monitors monthly for pests and has had no activity for 4 months.

ACTION
Staff must use paper towels to dry their hands after washing them. Do NOT use cloth towels as cloth allows bacteria to live and grow on it. Staff will be contaminating their hands with bacteria when they use a cloth towels to dry their hands.
All wiping cloths shall be stored in a bucket of sanitizer. The sanitizer will kill any bacteria that is picked up on the cloth. Add 1Tbsp of bleach to 4L of warm water. The sanitizer solution shall be changed every 3-4 hours, so the strength is high enough to kill bacteria. During the inspection, staff placed all cloths into a bucket of sanitizer.
Have a pest company treat all floor drains and sink drains with a special foam that kills flies and cleans the interior surface of drains.
Have the glasswasher fixed so the [Cl2] sanitizer is 50-100ppm during the rinse cycle. Ensure all dispensing motors (soap, rinse aid & sanitizer) and buttons are working correctly and dispensing at the right strength.
Wash the undersides of sinks; and the legs of sinks, racks and prep tables on a regular basis with a scrub brush and hot soapy water.
Pay the outstanding yearly health permit fees of $250.00 ASAP, or closure of the restaurant will occur until payment is received in full.
