210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Observed 3 styrofoam boxes filled with frozen raw fish left to thaw at room temperature in the retail area. This is not an acceptable method of thawing. As well, the retail area is hot, due to the large number of coolers and freezers. When food is left to thaw at room temperature, thawing does not occur evenly and some parts of the food will be warmer than others, resulting in increased bacterial growth in certain parts of the food. Acceptable ways to thaw frozen seafood include: under cold running water, in a cooler, or in a microwave.
Corrective Action(s): Frozen seafood moved back into walk in freezer. Please note that for any future inspections, if any thawed seafood is observed to be >4 degrees Celsius and left to thaw out at room tempearture for >2 hours, it will be discarded immediately.
