Comments

- Operator has pest control in place, however some mouse droppings were noted in hard-to-reach areas. Continue sealing any possible entry points. Do not leave any doors open. All food and food-related equipment is already being stored in pest-proof containers off the floor. If issue persists, contact a professional pest control company.
- Fly lights/traps were placed away from food prep areas - good.
- Hand washing sink was properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm in spray bottle.
- Three-compartment sink available for manual warewashing. Sinks were being set up at time of inspection.
- Potato filling for perogies was cooling on prep surface at time of inspection. OK.
- Walk-in cooler measured at 1C
- Walk-in freezer measured at -23C
- Production equipment maintained in sanitary conditions
- Food storage practices were satisfactory.
- Reminder to wash scoops for dry ingredients regularly.
