Prep cooler at 6-7 deg C (inspection occurred during large order where staff was in the middle of preparing a pizza. Temperature logs indicate that cooler temp was <4 deg C earlier in the day)
Walk in cooler: 3.2 deg C
Both chest freezers <-18 deg C
All foods in coolers and freezers covered
Thermometers available in coolers
Temperature log is maintained daily and kept up to date
3 compartment sink with bleach available on site to sanitize
Bleach sanitizer spray at 100 ppm chlorine residual concentration
