All hand wash stations were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4C or less (walk in, prep cooler..etc)
Walk in freezer -18C.
New small undercounter freezer added beside deep fryer to store frozen wings and fries -11C (Keep all frozen potentially hazardous foods stored at -18C or less).
No hot holding available. All foods are made per order.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
Good general sanitation. Dry storage area well maintained.
No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Quat sanitizer at source and in containers with cloths submerged 200ppm. Test strips available.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered, light covers in place..etc)
Staff on duty have foodsafe training, wear clean uniforms and hair restraints. Good hand washing practices observed.
Reminded operator of foodsafe recertification requirements. Information pamphlet provided at time of inspection.
