Observation (CORRECTED DURING INSPECTION): Wiping cloths were found all over the place on counter tops.
Corrective Action(s): Keep all wiping cloths in sanitizing solution. Limit the amount of cloths that are being used as there was too many.

Hand sinks provided with liquid soap and paper towels.
Sanitizer (quats) measured at 200 ppm
High temp. dishwasher reached >74 deg C at plate surface.
Upright freezer was below -18 deg C.
Walk-in cooler was at 2-4 deg C.
Prep line coolers are at or below 4 deg C.
Temperature log was available and up to date.
Dipper well was in good working order.
Active pest control in place - pest control company contract.
Washroom in sanitary condition.

1. Organize back area and walk-in cooler. Area in the back is very small so organization is key to ensure all items have a storage place.
2. Provide hair restraint for staff (i.e. hairnets, caps, etc.).
3. Food Safe 1 trained staff on-site when operator or manager not available
- At least one person on duty must have food safe 1 training.
