Observation (CORRECTED DURING INSPECTION): Dried-on food debris observed on the cheese grater which was stored near the mixer. It was stated by staff that the cheese grater was last used yesterday.
Corrective Action(s): Cheese grater placed into dishwashing area to be washed and sanitized. Ensure that all equipment/utensils/food contact surfaces are properly washed and sanitized after use to limit potential contamination of food. All equipment/utensils/food contact surfaces must be stored in sanitary condition.

Observation: 1. An accumulation of food and other debris was observed under counters and equipment as well as along floor-to-wall junctions.
2. Solied cardboard was observed lining the shelving throughout the premises.
3. A build up of dust was observed on the walk-in cooler fan cover.
Corrective Action(s): Ensure that the above-noted areas are properly cleaned and that all cardboard is removed. Food and/or other debris may potentially contaminate food and/or food contact surfaces. Food debris may attract pest activity. Date to be corrected by: August 7, 2018.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Only staff member on site does not have FOODSAFE Level 1 or its equivalent. Staff member stated that the operator had stepped out and would return within half an hour.
Corrective Action(s): Ensure that at all times in the operator's absence, at least one staff member on duty has FOODSAFE Level 1 or its equivalent. This is a regulatory requirement. Have additional staff FOODSAFE Level 1 trained and certified as necessary to ensure this requirement is met. Date to be corrected by: Today.

Routine inspection conducted:

- Walk in cooler at 4 degrees C
- Prep cooler at 1 to 5 degrees C (top inserts) and 4 degrees C (below). Note: Ensure that all food in top inserts reaches 4 degrees C or less.
- Left chest freezer at -16 degrees C
- Right chest freezer at -23 degrees C
- Only non-potentially hazardous beverages that do not require refrigeration, such as water and soft drinks, are stored in the glass cooler at the front (measured at greater than 4 degrees C)
- No hot holding at time of inspection
- Coolers equipped with thermometers accurate to 1 degree C
- Food is covered and stored off the ground
- Staff on site able to describe proper ware washing method. A bleach water sanitizing solution was prepared by staff at the ware washing sinks and measured at 100 ppm chlorine.
- Bleach water sanitizer available in labeled spray bottle at 100 ppm chlorine
- Hand washing sink is supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No signs of pest activity observed
- Staff member on site wears a clean apron and a hair net
Note: No temperature records are being maintained. Temperature records should be maintained for all cold holding units.
