Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available for use. Bleach solution made up during inspection.
Corrective Action(s): - Sanitizer solution must be available at all times during operation. Please ensure that sanitizer solution (1 capful/gallon ~ 200ppm) is available at all times to soak wiping cloths for the front and back food preparation areas of the kitchen.

Comments

** Prep cooler has ice forming inside the unit. It had been manually shut off to defrost. This could raise the temperature of the cooler if not properly monitored. Please repair as needed. Ensure that a thermometer is available to regularly check the temperature.

- Temperature of other coolers and freezers were adequate.
- Hand sinks were equipped with liquid soap and paper towels.
- No signs of pest infestation.
