-Note: Ensure that the meat sauce is kept either hot or cold. Discussed with the operator on site.
-Cooler to the left of the entrance had an ambient temperature of 6.9 C. Ensure that it is adjusted down to 1-4 degrees C.
All other coolers were < 4 C.
All freezers were < -18 C
No evidence of pests.
Bleach solution was at 100 ppm.
Dishwasher final rinse temperature reached 71 C at the plate level.
General sanitation was satisfactory.
