Observation (CORRECTED DURING INSPECTION):
The bucket of soap for the high temperature dishwasher was empty, no soap was being injected into the dishwasher during the wash cycle, therefore dishes are NOT be properly washed.
Corrective Action(s):
Replace the empty soap bucket with a full one, and "prime" (press and hold the detergent button down) the soap line so it is full with soap prior to using the dishwasher. If you have to order a bucket of soap, pre-wash dishes with soap and hot water prior to placing in the dishwasher for sanitizing.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; and thermometers present.
- High temperature dishwasher has rinse cycle of 77.4C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle was 200ppm. Ensure the Quats sanitizer is changed DAILY so the strength remains at 200ppm, light exposure and temperature changes will decrease the strength.
- Bleach sanitizer in cloth bucket was above 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; labeled; date coded; 6" off the floor on shelves; and in groups.
- Foods handled with utensils, and staff use disposable gloves. Remind staff to wash hands prior to putting on new gloves, and ensure staff are discarding gloves once taken off (not saved for later use).
- General sanitation level is good. No signs of pests.
- No expired foods in use or for sale.
