Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had a final rinse of less than 50ppm chlorine on the dish surface (trace amounts of chlorine)
Corrective Action(s): Chemical dishwasher must have a final rinse of at least 50ppm chlorine on the dish surface to allow for proper sanitizing of equipment and utensils. Chlorine sanitizer pail was changed and primed and was tested at 50ppm. Staff were rewashing all utensils from this morning.

Observation: Rodent droppings were found in the kitchen (back storage and front area).
Corrective Action(s): Contact your professional pest control operator to reinspect facility and apply control measures to prevent further pest issues. Clean and sanitize all areas affected by rodent droppings and continue to monitor for pest activity.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 4C.
-Upright cooler was at 4C.
-Upright freezer was at -21C.
-Cooler and freezer temperatures checked and recorded daily.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding.
-Sanitizer spray bottles were at 200ppm.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Raw meats stored on the lowest level. Foods covered and protected from potential contamination.
-Ice machine was clean and sanitary.
-FOODSAFE Level 1 valid until July 07, 2023.
