- 200ppm chlorine sanitizer available in spray bottle
- High temp. dishwasher reached >71C at plate's surface.
- Temperatures of refrigeration units are adequate.
The operators have just come back from vacation and cleaned fridges. One cooler measured 7C but the temperature was dropping.
- Thermometers in place.
- Thawing of fish in cold water observed.
- No hot holding at the time of inspection
- General sanitation is satisfactory.
