-air temperatures at 10 deg C
-internal temperature of beef 8 deg C

Operator is aware of the problem and a new preparation cooler is on order
Corrective Action(s): Do not store perishables at room temperature (5 to 59 deg C) more than 2 hours

Beef, egg and tofu were placed there less then half an hour as per operator

Reduce the portions by half -operator will apply the 2 hour rule for perishables at room temperature
