A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -12C or colder; hot holding 60C or hotter; thermometers present; and temperatures recorded daily.
- Low temperature dishwasher had [Cl2] between 50-100ppm. Test strips present and used.
- Quats sanitizer in spray bottle and at 3-comp dishwashing sink was 200ppm strength. Test strips present and used.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in groups; in food grade containers; covered; labeled; date coded; stored 6" off the floor on racks or platforms; and proteins stored away from non-proteins.
- No expired food in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Ecolab contracted for monthly monitoring of pests (ants, rodents, flies, cockroaches, & dry food pests).
- FoodSafe certified staff present.
- COVID-19 Safety Plan present and measures being followed.
- All surfaces and equipment are in good working order, sealed and cleanable.
- Ice cream machine was on defrost cycle during the inspection. It is scheduled to be replaced in 2 weeks.
- All in order.
- Discussed inspection results with the manager, no signature obtained due to pandemic. |
