- Ingredients added to hot liquor tank (malts) -> hops added to kettle (boiled for 60-90 min. -> Fermentation tank (sits for 2-4 weeks) -> Bright tank for carbonation -> Kegs.
- Operator's using "just in time" prod'n (Brew on Mon & Tues). Ingredients are picked up from suppliers as needed regularly. Facility is never open to the public while brewing is in process.
- Operator is still a part of the Keg share program.
- Operator will be using mobile Canning services called Mile 37 located at 1 - 2810 Huntington pl, Pt. Coquitlam. Canner will can & label cans. Operator has purchased a small canner for limited canning.
- Operator has decided not to offer growler filling service.
- Foodservice is restricted to pre-packaged foods (eg) package potato chips, pre-packaged sandwiches from an approved source. As per operator, food will be served in disposable dishes.
- Coolers are below 4 degrees Celsius (1 walk-in cooler & 1 smaller cooler & 1 upright cooler).
- Handsink in the brewing area and both washroom hand sinks are fully equipped.
- Grassroots sanitizer used for sanitizing Countertops in beer service area.
- Operator has installed a "lip" (8 inches high) @ base of roll-up door to prevent pest entry.
- Tanks & hoses are CIP equipment. For cleaning, High Alkali cleaner gets run through the hoses & tanks followed by water. Then the CiCasen PAA Sanitizer is pumped through using the CIP tank.
