Observation (CORRECTED DURING INSPECTION): 3 bags of cooked rice observed stored at room temperature. The internal food product temperature was measured to be 22C. Operator stated these rice was frozen and he was thawing them at room temperature for more than 4 hours.
Corrective Action(s): 3 bags of cooked rice was discarded by the operator. Cooked rice must be stored at 4C or lower / 60C or higher. Frozen cooked rice must be properly thawed by: under cold running water, inside a functioning cooler or defrost with microwave.

Observation (CORRECTED DURING INSPECTION): 2 out of 4 sanitizing spray bottles measured at 0 ppm chlorine solution. 200 ppm chlorine is required for proper sanitation of food contact surfaces.
Corrective Action(s): Discard and refill the aforementioned spray bottles to ensure 200 ppm chlorine solution is available for use from each bottle.

Routine inspection:
- Coolers (under the counter, prep, stand-up, beverage, beer) maintained at 4C or less.
- Chest freezers maintained at -18C or less.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Leaking faucet observed at kitchen hand washing station. Operator already brought the parts and it will be replaced this week.
- 200 ppm chlorine solution available in other sanitizing spray bottles.
- High temperature dishwasher registered 73C at the plate level.
- Ice machine and scoop maintained in sanitary condition.
- Dry food product organized.
- General sanitation satisfactory.
- No pest activities observed.
- Reminder to maintain a temperature logs on a daily basis for all coolers and freezers.
