Hand washing stations available with liquid soap, paper towels and in use.
Hot and cold running water available.
Food protected from contamination.
Equipment in good working order.
3 compartment sink in use. 300 ppm quat sanitizer buckets in use.
Temperature monitoring and logs in place.
Dish washer final rinse at the plate at 74.9 C as per min/max probe thermometer.
Holding units:
Front stove top tomatoe stew at 70C, 3 compartment hot holding at 109C.
Prep cooler at 3.9C cheese. Stand up cooler at 4.0C bread. Stand up freezer at -19C cheeses.
Storage cooler at 4.0C feta. 2 hot soup wells at 66C soups.
Coca Cola cooler at 9C and is only used for non-perishables such as bread - acceptable.
Permit posted in visible location.
