Observation: Ceiling venting in kitchen accumulating too much debris which can fall onto food.
Some hard to reach areas of kitchen and storage room observed with accumulations of food debris and old/new rodent droppings.
Corrective Action(s): Make sure to clean hard to reach areas in the kitchen and dining area as discussed.
Make sure to clean shelving in storage room, AND re-clean and sanitize all eent dishes on lowest shelf prior to use.
Remove rodent droppings in all rooms to evaluate past or present rodent activity.

Kitchen Quats auto feed takes too long to get to proper concentration. Auto dispensing unit needs multiple minutes to get to 200 ppm. If this system is used sparingly, solution may never get to proper concentration. Have technician look at unit.
Some rodent activity noted (minor) in kitchen and storage room. Likely overflow from production.
*Make sure staff do a good job of daily cleaning to remove any food sources for rodents AND to monitor rodent activity and movement patterns.
Dishwasher in kitchen at 50 ppm and at 71 C at plate in bar area.
Sanitizer in bar area at 200 to 400 ppm.
Cooling units less than 4 C.
Freezer below minus 18 C.
Handwashing facilities OK.
Walk-in cooler ok.
