Code 302 noted on Routine inspection # JSAS-C9CTSU of Dec-03-2021 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: High temperature dishwasher max temp 63 C No sanitizer spray bottles or sanitizer reservoirs prepared at concession to allow staff to sanitize food contact surfaces. Correction: High temperature dishwasher is to be repaired to provide a sanitizing cycle that meets or exceeds 71 C at dish level. Until repaired, all dishware / food utensils are to be manually cleaned and sanitized in 3 compartment sinks. 200 ppm Quaternary Ammonia is to be prepared and available for staff to use to effectively sanitize food contact surfaces. Manager prepared multiple sanitizer spray bottles during inspection.

High temperature dishwasher has been repaired, sanitizing temperature 81 C. Sanitizer spray bottles provided in front service area and back - measured 200 ppm Quaternary Ammonia.
