Display reach in cooler is now at 3.3 deg C air temperature. Packaged pasta meal inside was probed to be at 2.6 deg C. Staff member has put down a flat piece of corrugated plastic to keep the cold air in the top unit where the potentially hazardous food items are stored. There are no PHFs stored underneath the plastic (just pop and juice). This is fine as long as PHFs are not stored in the bottom of the unit which is now receiving limited cold air flow, and as long as the plastic piece is smooth and clean at all times.

All foods in cold holding units are covered.
