Observation: -2 Prep tables (not in use) being stored in front of walk-in freezer. Manager reported that this was brought in by another business who was planning to lease space.
-Accumulation of used packaging in boxes present which need to be removed from the premises.
Corrective Action(s): -Remove prep tables. Approval has not been given for space to be sublet to another business. Any proposed changes to layout, operation, or sublet of space require prior review and approval.
-Remove used packaging from the premises.

Comments

-Premises maintained in a sanitary condition
-Handwashing sink in production area and in washroom were supplied with liquid soap and paper towel.
-Hot and cold running water present
-Walk-in cooler was at 1C
-Fridge/freezer was at 2C/-16C
-Upright and chest freezers were -16C to -18C
-Quats sanitizer (200ppm) present in warewashing sink to sanitize dishes. Staff knowledgeable about manual warewashing procedures.
-Quats sanitizer (200ppm) present in spray bottle and used for food production surfaces (tables)
-Test papers present for verifying concentration
-No signs of pest issues noted at the time of the inspection. Numerous adhesive and snap traps noted. Director of Operations reported there were rodent issues in the winter. Entrance points/holes have been blocked. Pest Control contract in place with monthly service. Reviewed service reports from the past 3 months.
-Dry goods stored in original packaging in plastic bins.
***Cardboard being used to 2 shelves in walk-in cooler and 2 shelves adjacent to dishwashing sink. Cardboard is not a suitable surface as it is absorbent and cannot be washed. Remove cardboard.
Note: Walk-in freezer (not in operation) is currently being sublet to tenant preparing dried sweet potatoes dog treats which are not for human consumption therefore not regulated by Fraser Health. Tenant (Earth Paws Pet Products) evenings (5pm onwards) and Mondays when Fuud is not in operation.
