Food Safe Level 1 - main person in charge has certificate that is valid until 2023 - good. See www.foodsafe.ca for information on Refresher Course for those whose certificates will expire soon.
One person per shift requires Food Safe.
Food Safety Plan is available on site and temperature records for coolers and hot meals are being kept for each event (operates every 2nd and 4th monday).
Reviewed procedures for turkeys (defrosted in the fridge ahead of time and fully cooked/unstuffed). Information is also on the BCCDC website (turkey information).
Sliding door cooler and domestic cooler are both at 4 C/ 40 F or colder.
No hot holding today.
Chicken on menu today is being fully cooked in oven to 74 C / 165 F.
No food cooked ahead and cooled today but reviewed quick cooling requirements.
Hand washing sink has hot/cold water, liquid soap, and paper towels, in dispenser.
Non-latex disposable gloves can also be worn.
*Wiping cloth - discard and use a new one if contaminated OR soak in a chlorine solution of 200ppm chlorine (1 tsp domestic bleach in 1 litre of water).
Spray bottle has chlorine sanitizing solution and is labelled.
Commercial dishwasher has a final hot water sanitizing rinse of 180F/ 82 C (on gauge) and 160F/ 71 C (measured inside of the machine).
