Observation (CORRECTED DURING INSPECTION):
- Observed burrito fillings & rice being reheated using the warmer. All food items measured below 60C.
Corrective Action(s):
- Inspection took place during the store opening hour. Operator was instructed to heat up all the food items again to at least 74C or above before transferring them to the warmer inserts. Once transferred, food items must be maintained at 60C or above. There is only one induction stove which does not seem to be sufficient to heat up multiple food items (6 fillings, rice, soup etc.) in timely manner. Equip a microwave for faster/ efficient reheating. Operator in agreement.
