Follow up inspection of the food premises conducted.
All previously mentioned violations have been corrected:
- Freezer light in the walk-in freezer has been replaced and is fully functioning
- Food is being cooled in an acceptable manner. Tubs of curries are left open in the cooler for rapid cooling and then closed after a few hours to prevent contamination. Freshly made chickpea curry was at 53C kept at room temperature for cooling and curries inside the walk-in cooler were at less than or equal to 4C internal temperature. Reminder that other rapid cooling methods can be used to improve food safety, such as cooling wands, ice baths, etc. Frequent stirring of cooling food items is also an acceptable method for rapid cooling within the cooling curve.
Keep up the good cooling practices to ensure food is cooled from 60C-20C in 2 hours and 20C-4C in 4 hours.
- Premises has undergone some level of cleaning. Floors are less slippery but more work is required to maintain sanitation.

Note: keep an extra bucket of sanitizer for storing all wash cloths. Do not store dirty wiping cloths on food contact surfaces.
