Observation (CORRECTED DURING INSPECTION): Mouldy zucchinis found in walk-in cooler.
Corrective Action(s): Operator discarded zucchinis at time of inspection.
Ensure to go through walk-in cooler and discard any old food items on a regular basis. All items should be properly dated.

Observation: 1) Further cleaning and sanitizing required in both dry storage areas behind and under storage racks and chest freezers. Old rodent droppings noted in corners behind chest freezers.
2) Floor underneath ice machine still requires cleaning
Corrective Action(s): 1) Pull out all freezers/coolers and storage racks from both dry storage areas to clean and sanitize floors.
2) Clean under ice machine. Operator stated a rubber mat will be placed under ice machine for easier cleaning.

Comments

- Glasswasher at bar has been serviced. 100ppm chlorine residual detected at the dish surface after rinse cycle. Appropriate test strips (chlorine) obtained for this glasswasher. Ensure to check glasswasher sanitizer concentration on a daily basis.
- Proper hot-holding was being done at time of inspection.
- All hand washing sinks were easily accessible and properly supplied with hot and cold running water, liquid soap, and paper towels.
- Deep cleaning in kitchen under cooking equipment has been completed.
- Walk-in cooler floors have been cleaned. *Further re-organization of walk-in cooler required.
- Hot-holding unit has been cleaned and sanitized.
- Area around potato slicer has been cleaned and sanitized. *Ensure this area, including all parts (handle, blades, grips, etc.) of the potato slicer, are cleaned and sanitized after each use.
- Both dry storage rooms have been re-organized, however *cleaning under storage racks and behind/under refrigeration equipment and chest freezers still required. (See violation code 306).
