Observation: Minor soil/food residues observed on some surfaces in the food premises (3-comp sink backsplash, shelving, inside refrigerators)
Corrective Action(s): Thoroughly clean and sanitize all surfaces in the food premises on a regular basis. Spills and food debris should be cleaned up immediately to protect food contact surfaces from contamination.

Observation: Hand-sink is not operational at time of inspection (water supply is shut off). Adjacent 3-compartment sink is currently being used for hand-washing.
Corrective Action(s): Repair the hand-washing sink by Wednesday, September 18th, 2019. Use of the 3-compartment sink for hand-washing is not ideal, as it is needed for washing equipment.

- High-temp dishwasher achieved final rinse temperature of ≥71o Celsius
- No pest activity observed during inspection

Reviewed jerky procedures with operator:
-All products are heated in the dehydrator at 160 degrees Fahrenheit. Minumum duration for dehydration process is 4.5hrs.
