Observation (CORRECTED DURING INSPECTION): Two boxes of frozen pork observed to be thawed in the meat processor room.
Corrective Action(s): Transfer the two boxes of frozen pork in a cooling unit able to hold an air ambient temperature of 4C or lower. All potentially hazardous foods (e.g.: frozen pork) must be thawed in a cooling unit able to hold an air ambient temperature of 4C or lower.

Routine Inspection conducted today.
Refer to report#JCHY-C4VREJ for communicable disease compliance check.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizer buckets and dispenser measured at 200ppm.
Meat processor room measured at 10C air ambient temperature.
Display coolers and walk-in coolers measured at 4C or lower. Walk-in freezer measured at -18C. Temperature logs are well maintained. Temperature logs shows cooling units adheres to temperature health requirements.
Separate band saw used for raw pork and beef. Operator informed that band saws, meat grinder, and knives are cleaned and sanitized every 4 hours.
No signs of pests observed. Premise has weekly pest control company (i.e.: Rentokil) to come in for pest control.

NOTE: Ensure that weekly pest control reports are available on-site for review by District EHO.

Overall, facility is well organized.
