Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer for the commercial dishwasher is not reaching 50ppm. Operator advises that dishes and utensils are bleached prior to being washed in the dishwasher.
Corrective Action(s): After washing and rinsing, ensure that dishes and utensils are sanitized. Use 100ppm for 2 minutes to manually sanitize until dishwasher can provide 50ppm automatically. Chlorine solution available during inspection.
