General Comments:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding was over 60 degrees Celsius.
Temperature logs are being maintained.
Condiments were time labeled.
Hand sinks were stocked with liquid soap and paper towels; washroom sinks are fully equipped.
Discussed burger prep procedures. Temperature is checked for the first batch of burgers to ensure the inside reaches 165 degF.
Quats sanitizer in both buckets were 200ppm.
Dishwasher rinse temperature was 71 degC at plate level.
Mgr on duty had FS level 1 equivalent certification.
Rentokil pest control is on a monthly contract. Last report reviewed.
