Observation: 1. Shelled eggs are prepared next to bean sprouts. Raw eggs can contaminate the raw bean sprouts which may not be fully cooked.
2. Prepapred vegetables with lids or are double stacked in stand up cooler during rush hour.
Corrective Action(s): 1. Ensure processing raw eggs do not contaminate other ingredients. Use dedicated tongs for bean sprouts and ensure to wash your hands if they become contaminated to not contaminate different products. (CORRECTED AT THE TIME OF INSPECTION)
2. Ensure rush hour food prepped is stored properly with proper lids and covers when placed in storage. Correction required today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Old food debris, grease and dust accumulation observed in hard to clean places in kitchen. This can be observed in the walk in coolers walls, shelving and fans. The outside of knife holders can use a clean as well.
Corrective Action(s): Ensure to wash and sanitize these areas and other parts of the kitchen as needed. Correction required in 2 weeks.

Observation: Chest freezer for chicken wings is currently falling apart and held together by duct tape. Parts of the pink insulation may fall out and contaminate the food supply if repair is not maintained.
Corrective Action(s): Consider replacing this unit. Repair is needed to ensure this unit is sanitary. Repair of unit needed this week.

Observation (CORRECTED DURING INSPECTION): Bags of road salt/sand and detergent observed stored next to food storage racks. These items can contaminate the food storage area.

Comments

Premise overall is sanitary. No signs of pests at the time of inspection.
Hot and cold water available.
Hand sinks in use with liquid soap, paper towels and hot and cold running water.
200 ppm bleach sanitizer in use in spray bottles and sani buckets.
Ice machine is sanitary with dedicated scoop.
Dishwasher final rinse at 88.2C at the plate.

Holding units:

Soup holding units at 88C, rice units at 60C and above, front cooler at 3.8C chicken balls,
1.2C vegetable and prep cooler, walk in freezer -25.8C meats, walk in #1 raw proteins 2.8C,
walk in cooler #2 noodles at 2.4C, vegetable walk in cooler 0.8C cake,
stand up freezer -20C fries, front dessert fridge 4.1C creams and -18.5C ice creams,
chest freezer -18.8C chicken wings.
NOTE: I would recommend replacing this freezer as it is old and is in need of repair.

Temperature monitoring and chemical sanitizer checks done daily with logs - good.
Main bar is satisfactory. Cooler only holds wine and beer.
2nd bar station not in use at the time of inspection.
Washrooms are sanitary with fully stocked hand sinks.
