- Coolers were all 4 C or colder - Freezers were all - 18 C or colder - No hot holding of food at time of inspection, hot holding unit was 60 C - Hand sinks had liquid soap, paper towel, hot and cold water - Wiping rags were in 200 ppm chlorine, do not add soap at the same time - Dishwasher had a final rinse of 75 C at the plate and 183 F at the gauge. - No signs of pest activity noted during inspection - General sanitation is satisfactory.
