Observation: - Upright storage freezer (white) measured at 14C internal food temperature
Corrective Action(s): Following item items were discarded:
- 2 boxes of beer battered fries
- 1 box of onion rings
- 1 box of pickle spears
- 3 bags of chicken
- 6 bags of pulled pork

- The kitchen is not in operation, no records are available to verify the temperature noted for past few days.
Service the freezer and ensure that the temperature is maintained at less than -18C ( and less than 4C for refrigerated items)

Observation: Bar glass washer is not working, it dispensed 0ppm (at 18C) during final rinse cycle
Corrective Action(s): - Service the glass washer and ensure that is dispenses 12.5 ppm at 25C during final rinse cycle.
Meanwhile use the low temperature dishwasher available in the kitchen

Comments

- All handsinks in the kitchen are stocked with hot and cold running water, soap and paper towel.
- All coolers - line cooler, prep cooler, drinks cooler - are less than 4C
- Upright storage freezers - are functional
- Quats sanitizer in spray bottle is measured at greater than 200ppm solution
- Dishwasher is measured at 50ppm chlorine residual during final rinse at the dishsurface
- No evidence of pest activity is noted at the time of inspection
- General sanitation is satisfactory
