Corrective Action(s): Ensure canned foods, once opened, are transferred into food grade containers with proper covers to protect foods from potential contamination.

Observation: 1) Prep cooler (left side) was at 6-7C
2) Prep cooler door seals are broken and need to be repaired/replaced.
Corrective Action(s): 1) service or adjust cooler and ensure it can maintain 4C or less at all times.
Correction date: April 15, 2019.
2) Ensure door seals are maintained in good condition. All equipment must be in good working order.

Observation: Staff member on-site does not have FoodSafe Level 1 or equivalent.
Corrective Action(s): Operator has valid FoodSafe Level 1 (12-17-2023), but when operator makes deliveries, there are no staff with FoodSafe Level 1 or equivalent in the facility. In the absence of the operator, at least one person in the facility must have FoodSafe Level 1 or equivalent. Staff member to register for FoodSafe Level 1 this week.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at (right unit) was at 4C top and bottom.
-Upright freezer was at -16C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink plugs available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle labelled and tested at 400ppm (ensure sanitizer strength does not exceed 400ppm - excessive concentrations may be toxic for human health.
-Vegetable cutter was found to be clean and sanitary at the time of inspection.
-Foods stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
