Observation (CORRECTED DURING INSPECTION): Internal temperature of food items in 3 doors undercounter cooler measured at 5-5.5C (mostly high sugar items such as syrup, puddings, etc.). The operator lower the temperature setting at this time. Obserbved ambient air temperature of 1C after the adjustment.

Observation (CORRECTED DURING INSPECTION): Observed two knives stored in a knife holder with visible water on them. Knives were rewashed and sanitized at this time. Ensure food contact surfaces are air dried prior to storing. The knife holder was removed from the site as its design was appropriate for easy cleaning and sanitizing.

Observation (CORRECTED DURING INSPECTION): Back hand washing station's basin was obstructed by a green pail. The pail was removed at this time.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was tested >200 ppm chlorine, resulted in bleaching out the test paper. 100 ppm chlorine sanitizer prepared at this time.

Observation (CORRECTED DURING INSPECTION): Uncooked tapioca pearls were observed on the floor behind the 2 door cooler in the back kitchen. The operator cleaned this area at this time.

Observation: Front hand washing station was damaged and was not in use at this time. Plumber is already contacted. The facility was using a drink warewashing sink temporarily. This sink is also equipped with hot and cold running water, liquid soap and paper towels.
Corrective Action(s): Service the hand sink.

Routine inspection conducted:
Hand washing stations were fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate (see an exception in the violation section).
High temperature dishwasher's sanitizing cycle was measured at 74.6C at the plate level.
Cooked tapioca pearls hot held at 60C.
All coolers measured at 4C or less.
Ice machine in sanitary condition.
No sign of recent pest activity noted at this time.
Temperature log was not available at this time. Ensure temperature is logged twice per day as per your Food Safety Plan. Temperature log will be reviewed in subsequent inspections.
