Observation (CORRECTED DURING INSPECTION): Concentration of the Quat sanitizer (bucket with wiping cloth) in the front area was measured to be 50 ppm.
Corrective Action(s): Discard and replace with fresh sanitizer. Concentration was remeasured to be 200 ppm. Ensure sanitizer is replaced at least every two hours. Date to be completed by: Immediately

Observation (CORRECTED DURING INSPECTION): A empty pitcher was left in the basin of the hand washing station by the cooking line.
Corrective Action(s): Remove the pitcher from the basin. Ensure that all hand washing stations are always unobstructed and used only for hand washing. Date to be completed by: Immediately

-General sanitation is satisfactory
-All hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
-All coolers (stand-up, prep, under-counter) at < or = 4C
-Stand-up freezer at < or = -18C
-Hot holding units at > or = 60C
-Low temperature dishwasher in use. Chlorine concentration reached 50 ppm at the plate level during final rinse.
-Two compartment sink is available for manual dishwashing
-200 ppm Quat sanitizer is available in buckets with wiping cloths and in spray bottles. Labels in place.
-Meat slicer is well-maintained. Cleaning occurs after each use.
-Dry storage is satisfactory
-Washrooms provided to customers are clean and equipped with proper hand washing stations
-No signs of pests observed during inspection. Ecolab provides pest control services once a month.
