Corrective Action(s): Single use items cannot be washed and sanitized after each use and must be discarded after each use. Single use plastic containers were discarded at the time of inspection.

-Sushi line cooler was at 4C.
-Sushi prep cooler was at 4C (top and bottom).
-Sushi area bar cooler was at 4C.
-Sushi area upright cooler was at 4C.
-Back kitchen cooler was at 4C.
-Back kitchen freezer was at -18C.
-Kimchi freezer was at -7C.
-Hot holding was greater than 60C.
-Sushi rice had a pH of 4.0.
-Hot potentially hazardous foods cooled rapidly in the freezer and were at 4C.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails properly labelled and tested at 100ppm to 200ppm.
-Sushi cutting board sanitized at least every 2 hours.
-Equipment was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FOODSAFE Level 1 valid until August 31, 2024.
