All coolers are maintaining foods at 4 degrees C or colder.
Dishwasher final rinse had a 100 PPM chlorine residual at the plate surface. Acquire chlorine test papers to verify that there is adequate chlorine residual at plate surface.
Ensure that temperatures of all coolers and freezers are being monitored and recorded daily. To be corrected immediately.
Quat sanitizer in spray bottles and sanitizer sink measured 200 PPM quat residual.
Liquid soap and paper towel at handsinks.
Hot holding of meat and rice was 60 degrees C or hotter.
