Beverage-air cooler 2C to 3C

Cooler under the Rational combo oven not in use as there may be an issue with the fan. **Must repair.
-Low temperature dishwasher: 100ppm chlorine detected at the plate

-Quats sanitizer 400ppm in spray bottles
-Hot held foods: 63C
-Ice machine cleaned 2 times a year as per operator (or sometimes every 3 months) *Ensure to follow cleaning schedule.
-Fume hood to be due for cleaning on April 28, 2019.
-No signs of pests at time of inspection.
-Handsinks had hot and cold running water, liquid soap and paper towels.
-Some general cleaning must be done to the following areas:
deep fryer backside surfaces must be degreased and cleaned
the bottom shelf of metal rack where utensils were stored (dust build-up)


From previous inspection reports:
-grease droplets no longer found on fume hood.
-the fan in the walk-in cooler was cleaned as per manager
-the knives with duct tape were discarded
-fallen debris and utensils were removed from under the equipment noted.
