Observation (CORRECTED DURING INSPECTION): Meat grinder and band saw has been mostly cleaned and sanitized. However, there are still traces of grime between the holes of the grinder outlet and also in the bottom compartment of the band saw.
Corrective Action(s): Debris and grime removed and surfaces sanitized at time of inspection. Ensure that you fully address each part of the machine when you clean and sanitize.

Follow-up inspection to RPT#: JMAA-B6SVCM on Nov 23, 2018.

- Another sanitizing pail has been acquired for the other prep table (near the Fido poster). There are a total of 3 sanitizing pails: 2 near the band saw, and the sanitizing pail at the Fido prep table
- Sanitizing pails at 200 ppm chlorine residual
- A sanitary drying rack has been obtained for cleaned and sanitized knives
- Wall around 3-compartment sink has been wiped
- A tray has been acquired to store the knives underneath the prep table. Operator has stated that the tray will be cleaned and sanitized every 4 hours, along with all knives and implements inside
- No rags observed hanging on display coolers - good. Remember that all rags must be placed inside a bleach solution to avoid buildup of bacteria
