Observation: Minor pest activity (mouse droppings) noted on floor surfaces in the primary kitchen pantry and various kitchenettes in the ground-level wards.
Corrective Action(s): Clean and sanitize affected surfaces using a disinfectant chemical and report activity to the pest control company for further investigation/action.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dishwasher in one of the kitchenettes (Elm South) is not reaching sufficient rinse temperature for sanitizing dishware. 3 attempts made, maximum temperature reading inside unit was 64 degrees Celsius.
Corrective Action(s): *Contact a service technician to inspect and repair the affected unit.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand washing station at the dishwashing area has been decommissioned (tap handles, soap and paper towel dispensers all removed). Staff must be able to wash their hands between racking the dirty dishes and unloading the clean dishes.
Correction: Reinstate hand washing station and remind staff of the importance of washing hands between touching dirty and clean food contact surfaces. Due: August 22, 2023

-Routine inspection conducted of the primary kitchen/cafeteria and all kitchenettes in the Dogwood, Elm, and Ashwood wards

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels in all kitchens
- Refrigeration temperatures are ≤4o Celsius in all kitchens
- Freezer temperatures are satisfactory in all kitchens
- Hot-holding temperatures are ≥60o Celsius
- Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration (Lemontree Quats)
*Note: Surfaces that come into direct contact with food (utensils, dishware, cutting boards) must be rinsed with potable water if they are sanitized with the Lemontree solution (to remove chemical residues)
- High-temp dishwashers reached final rinse temperature of ≥71o Celsius in all wards with one exception (Elm South)
- Minor pest activity noted in the primary kitchen (pantry) and the Dogwood/Elm kitchenettes
